The research field of Food Safety and Zoonoses focuses on the production of safe food through:

  • the control of infection by bacteria, viruses and parasites in all animal production chains (pig, poultry, egg, dairy, beef, veal and fish);
  • the prevention of antibiotic residues in food of animal origin;
  • and the prevention of consequences of both groups of contaminants on the quality of the end product.
In addition, this field of research examines the development, detection and limitation of zoonoses (pathogens which pass from animals to humans).

The main areas of interest within Food Safety and Zoonoses are:

Within the research area of Food Safety and Zoonoses, the Central Veterinary Institute carries out research for national and international governments, commodity boards, research organisations and the business community in order to maintain the quality of animal products and to limit the risk of pathogens passing from animals to humans.

The OIE recognises the Central Veterinary Institute as a reference laboratory for Campylobacter. (OIE Reference Laboratory for Campylobacteriosis in cooperation with the Faculty of Veterinary Medicine Utrecht University).
